Set within the rolling hills of the Mendips in the Bristol countryside, the Michelin Green starred The Ethicurean, co-owned by Matthew Pennington and Mark McCabe as head chef is one of the most picturesque and tranquil dining experiences you could hope to find. It's a love letter to nature, the British countryside and the wilds. Here, you can re-connect with your surroundings, as well as encounter new tastes, flavours and textures.
Taking 80 to 90 per cent of all its fruit, veg and herbs from its Victorian walled garden and orchard, as well as produce sourced and foraged locally, The Ethicurean stays true to its ethos of British seasonality and cultivation. Everything is made in-house from homemade miso to its own vinegars to replace citrus. Even the crockery is made by local potters! Head chef Mark, who you might have seen earlier in the year representing Scotland on The Great British Menu says, “British locality and seasonality is so important to me. In all honesty, I don't know how else to cook.”
From June The Ethicurean will be starting a programme of Wednesday Suppers. You'll have the opportunity to join the team for a relaxed evening celebrating the finest ingredients from the garden and beyond. The menu comprises three courses using the best that the garden has to offer, supplemented with impeccably-sourced meat and dairy. A choice of omnivore and vegetarian menus are offered when booking. A laid-back affair on a midweek evening, this experience allows you to unwind and enjoy the expansive view over a delicious supper.
